Let's prepare the curd filling for puffs. In a deep container, combine pasty cottage cheese and granulated sugar. For flavor, add vanillin (can be replaced with vanilla sugar) and ground cinnamon. Separate the yolk from the protein and add the yolk to the filling.

Stir the filling until smooth. If you are using granular cottage cheese, then you can grind it through a sieve or beat the filling with an immersion blender to make it more homogeneous and tender.

Take the puff pastry out of the fridge and defrost according to the instructions to make it elastic. On a floured work surface, roll out the dough into a rectangle 3-4 mm thick. On each blank we will make cuts to get a curly mesh.
