My children really loved these kefir pancakes when they were little. After all, pancakes that contain no flour at all turn out much softer than regular ones. And even when cooled, they remain crumbly. There are never any surprises when baking such pancakes, so novice housewives can safely take this recipe into service.

To bake these semolina pancakes, you will need:

  • two glasses of semolina;
  • a glass of kefir;
  • 1 tbsp. spoon of sugar;
  • 2 eggs;
  • half a teaspoon of salt;
  • a pinch of citric acid;
  • half a teaspoon of soda;
  • vegetable oil for frying.

Place eggs, sugar and salt in a bowl (Image 2).
Beat the mixture well with a whisk or mixer to form a foam.

Pour in the kefir and stir with a wooden spatula (you won't need a mixer anymore) (photo 3).

Add semolina, stir so that there are no lumps, and leave the semolina dough for 1-2 hours for the semolina to swell (photo 4-5).

Pour soda, citric acid into the thickened dough and pour one tablespoon of kefir so that the soda reacts with the acid faster (photo 6).

Stir the dough in a circular motion until small bubbles appear (Pic 7)

Now you can start baking the pancakes. Pour enough oil into the frying pan to cover the bottom of the frying pan by 1-2 mm, since semolina pancakes absorb fat strongly. Heat it up. Then turn down the heat. Use a spoon to take small portions of the dough and place them on the frying pan (photo 8).
Then close the pan with a lid.

One side of the pancakes is browned - turn them over to the other side. This is done like this: you pry up the pancakes with a spatula, and with a fork, which you hold in your other hand, grab the top edge of the pancake and carefully turn it over (photo 9).
Close the pan with a lid again and bring the pancakes to readiness.

Place the finished pancakes on paper napkins to remove excess fat (photo 10).

Serve these pancakes with sour cream or your favorite jam (photo 11-12).

Or you can mix sour cream and jam, then you will get a very tasty sour cream sauce.

This recipe produces fluffy, very soft and delicate texture. The sweet dough goes well with the sourness of raisins and lemon aroma. Raspberry or cranberry jelly will be a great addition to pancakes. We will need:

  • 1 liter of milk at least 3.5%;
  • 1/3 teaspoon fine sea salt;
  • 180 grams of semolina;
  • 1 tbsp. spoon of lemon zest;
  • 1 tbsp. a spoonful of fresh lemon juice;
  • 80 grams of sugar with 1 teaspoon of vanilla sugar;
  • 1 large chicken egg (D-0);
  • 90 grams of raisins + 150 ml of boiling water;
  • 320 grams of wheat flour + 0.5 teaspoons of soda.

How to cook semolina pancakes with raisins

First of all, soak the raisins in boiling water and set them aside.

Pour salt into the milk and bring it to a hot state, but not to a boil. Pour semolina into it, spreading it over the entire surface of the milk, while actively stirring the milk with a wooden spoon. Now you can add sugar and vanilla. Cook semolina porridge until ready. It shouldn't turn out too thick. Let it cool until warm.

In a separate container, beat the egg and add it to the porridge. Mix everything well. Drain the raisins into a colander, dry them with a towel and pour them into the porridge. We also send the zest and juice of the lemon there.

Then, sift flour and soda into the porridge and knead the dough for pancakes. Set aside and let the finished dough rest for about 15 minutes. During this time it will become denser and will be completely ready for baking.

Using two tablespoons, form and lower them into the already heated oil.

Remove the fluffy pancakes to a plate, which is preferably covered with a layer of disposable towel.

Semolina pancakes with raisins can be served hot or cold.

In any form they are equally tasty. I usually serve these semolina pancakes with raisins with raspberry jelly, but you can also serve them with a bowl of sour cream, honey or jam.

Refined sunflower oil – 35 ml

Number of servings – 2

Preparation time – 5 minutes

Cooking time – 30 minutes

Prepare all the necessary ingredients.


Beat an egg into kefir.


Beat the mixture with a whisk.


Put sugar and soda into the mixture (do not extinguish it!).


Mix everything.


Add semolina.


Mix the mixture and leave the cereal to swell for 10–15 minutes.


Add flour to the resulting mixture.


Mix the dough well.


Place small pancakes in a frying pan with heated oil and fry on both sides until browned.


Serve semolina pancakes with kefir with jam, syrup, condensed milk or sour cream.

A familiar dish can always be prepared and served in such a way that there will simply be no one who refuses it. For example, pancakes with semolina are probably often prepared in any home, and there is nothing special about their preparation. We want to change your mind a little. And the secret is simple. Let's add a twist to a familiar dish to make its taste even more attractive.

Ingredients:

  • kefir - 1 glass (300 ml),
  • vegetable oil - for frying,
  • orange zest - 2 tbsp. spoons,
  • chicken eggs - 2 pcs.,
  • sugar - 2 tbsp. spoons,
  • semolina - 4 tbsp. spoons,
  • baking soda - 1/3 teaspoon,
  • wheat flour - 3-4 tbsp. spoons,
  • sour cream with sugar - for serving,
  • honey - for serving.

Cooking process:

Pour kefir into a bowl and add semolina. Mix the contents well and leave for 20 minutes so that the semolina becomes softer and swells.


When the required time has passed, add sugar. The sugar level is calculated for moderately sweet dough. Those with a sweet tooth should add more sugar to their pancakes.

Pour boiling water over the oranges and remove the zest from the skins using a fine grater. Place the orange zest in a bowl with the kefir-semolina dough.


Beat in the chicken eggs. If you want to use quail eggs, then double the amount.


Add wheat flour and soda. Then stir the dough with a whisk to remove any lumps.


The consistency of the dough for pancakes with semolina will resemble thin sour cream.


Pour oil into the frying pan and wait for it to heat up. Use a large spoon to spoon out the dough. See when the pancakes become golden brown on one side, carefully turn them over to the other. Leave them to cook for a few more minutes depending on the heat.


Place the finished orange pancakes with semolina and kefir on a dish with paper napkins. After some time, the excess oil will go away and the pancakes will become less greasy. For a more dietary option, fry the pancakes in a dry non-stick frying pan.


You can serve this delicious dessert with sour cream. It's easy to prepare: just mix sour cream with sugar. Pour sauce over pancakes. You can add a little honey.
