What is the best way to cook strawberries? Recipes with strawberries

Strawberries are truly a royal berry! With whipped cream, soft buttercream or ice cream, or simply with sour cream - it’s impossible not to love it. But, when the season is high and you have already eaten your fill of berries, you should think about preparing them for the winter.

Strawberry jam- the first thing that comes to my mind when the conversation turns to preserving berries for the cold season. But what if you don’t like strawberry jam or are simply tired of it?

Editorial "So simple!" invites you to expand your repertoire and learn 5 delicious alternatives to boring strawberry jam and compotes. Here are simple ideas for what else you can make from this delicious miracle berry, the season of which, alas, is very short. For those who were lucky with the harvest!

What can you make from strawberries?

  1. Frozen whole strawberries
    This is the simplest and yet most universal idea. All you need to do is wash, dry and put the strawberries in the freezer, and then wait for winter.

    But in winter, you can make compotes from whole strawberries, make cakes with strawberry cream, ice cream, shakes, cocktails and smoothies! Alas, when defrosted, the whole berry loses its shape and eating it just like that is not very pleasant, but for other purposes it is wonderful.

  2. "Ice jam"
    Pour boiling water over washed and peeled berries. Next, rinse the strawberries and the containers you will be filling. It is better to use containers with lids; they should be dried before packaging.

    Grind the strawberries in a blender along with the sugar until it is completely dissolved. After this, pack the future delicacy into prepared containers and place it in the freezer.

    Such berries will not freeze, and they can be taken from the container in small portions. In this variation frozen strawberries All vitamins and nutrients will be perfectly preserved.

  3. Strawberry marshmallow
    Well, this is my favorite option! The general principle of preparing marshmallows also works in this case: the berries should be pureed, sugar and other additives (mint, basil, vanilla, cinnamon) should be added, then the mixture should be poured into a special tray for preparing marshmallows and the workpiece should be placed in an electric dryer.

    After 5–12 hours (depending on the moisture content of the berry), the finished strawberry marshmallow can be rolled into rolls and stored for the winter. Well, if you don’t have an electric dryer, the marshmallow can be cooked in the oven at a minimum temperature.

  4. Strawberry ice cream
    To fill your freezer with this natural delicacy you will need: a liter jar of fresh strawberries, a glass of sugar and 500 g of heavy cream.

    Wash the berries, then pour boiling water over them and grind in a blender. Add sugar to the resulting puree and wait until it completely dissolves.

    Cool the cream a little and beat it with a mixer, while adding the berry puree. Fill an ice cream maker or shallow bowl with the mixture and place in the freezer. If you don't have a special device, stir the mixture every half hour to prevent it from freezing.

  5. Strawberry chips
    Preparing such natural fruit chips requires almost no effort: all you need to do is wash the berries, dry them and place them on electric dryer trays (oven tray).

    By drying strawberries, you'll get delicious chips that don't take up much space, but offer dozens of ideas for use! In addition to being eaten plain, strawberry chips can be added to mousses, cakes, tea, muesli, muffins and casseroles.

Strawberries – 15-17 pieces;

Milk – 2 glasses;

Water - 2 liters;

Strawberries, raspberries and cherries - 100 grams each;

Starch (potato) - 4 tablespoons;

Sugar - 4–5 tablespoons.

Preparation.

Rinse the berries under cool running water and tear off the stems. You can remove the pits from the cherries, but this is optional. Then pour cold purified water over the prepared berries, put on fire and bring to a boil. Cook over low heat for about 10 minutes. It is not advisable to heat the berries for longer, since all the vitamins may be destroyed. After the broth, let it brew and cool.

While the compote is infusing, you should prepare the starch. To prepare jelly, it is customary to use potato starch, since corn starch has an unpleasant aftertaste and will form a sediment. Pour starch into a glass, pour cool boiled water or cooled broth. Then mix the mixture thoroughly so that the starch is completely dissolved and a white, thick, homogeneous mass is formed.

Next, strain the contents of the pan through a colander. Place the berry broth back on the stove, add sugar to taste and bring to a boil. Then, in small portions, stirring constantly, pour the starch mixture into the broth. When the jelly begins to thicken, turn it off. Do not boil, otherwise the drink will become liquid.

When the berry season is in full swing, the question inevitably arises: “What can be made from fresh strawberries?” There are a lot of recipes today, but it is advisable for busy housewives to choose ones so as not to spend days in the kitchen and at the same time fully enjoy the taste of berries in all possible manifestations. Do you think this is unrealistic? Now we will convince you!

Briefly about the queen of berries

It’s not for nothing that they call strawberries that way: their truly magical effect on the human body often baffles even eminent doctors!

The interesting thing is that strawberries taste quite sweet, but there is practically no sugar in them, so this berry is recommended not only for those who want to lose weight, but even for people with diabetes. In Hollywood, the strawberry diet is popular among stars, thanks to which you can lose up to three kilograms of excess weight in four days. This may be true, but most likely it’s due to the diuretic effect of the berry: the increased potassium content actively stimulates the functioning of the kidneys and lymphatic system, ridding the body of excess fluid.

Due to the presence of a significant dose of B vitamins, they are considered antidepressant berries: only 200 grams per day - and the nervous system will be in perfect order. Moreover, a person needs to eat exactly the same amount of strawberries to replenish the daily requirement of vitamin C, which is more abundant in this crop than in citrus fruits. Haven’t you forgotten its properties as an aphrodisiac? This is in addition to all other advantages: anticancer, antifungal, antiseptic and antirheumatic effects. The list could go on for a long time, but as they say, it’s better to eat the cake than talk about it. So let's get into the recipes.

What you can do with strawberries: interesting ideas

This berry provides plenty of options for creativity, as it can be combined with so many products, from fruits to vegetables, meat and even fish. So what can you do with fresh strawberries?

  • Drinks: compotes, fruit drinks and mojitos, as well as strawberry milkshakes and jelly.
  • Desserts: mousses, jellies, ice cream, soufflé and sorbet, frozen purees and delicate parfaits.
  • The filling of cottage cheese with strawberries for drizzled pancakes requires no introduction or advertising: this is the first thing you can do with strawberries during the berry season.
  • Various salad options: from fruit to combined with herbs, vegetables, cheese.
  • Alcoholic drinks like “Margarita”, “Daiquiri”: they can quickly be made from strawberries, which is very convenient during the party.

Dessert in 15 minutes with fresh strawberries

What can be done in such a short time to make it tasty and beautiful? Of course, sorbet! It’s easy and quick to prepare, and in the summer heat it’s an excellent delicacy that’s very much loved by children. Grind the strawberries with a blender, and if the seeds are confusing, it is better to pass the mass through a sieve. For two glasses of this puree, take the same amount of fresh milk, half a glass of granulated sugar and 1 tbsp. l. freshly squeezed lemon juice. Lightly beat with a blender and place the container with sorbet in the freezer.

Stir the mixture once every half hour, distributing the cooled parts evenly over it. When the sorbet has completely hardened and begins to harden, turning into ice cream, take it out, beat it a little with a blender again, form balls using an ice cream scoop (or just a tablespoon), place it on portioned saucers, garnish with fresh strawberries and a mint leaf.

Strawberry mojito

You can make a drink from strawberries that your guests will surely enjoy. Mojito is a low-alcohol drink because it contains rum. To prepare two servings of this drink, take:

  • 2 glasses of water;
  • 1.5 cups sugar;
  • 200 grams of fresh strawberries;
  • 50 grams of rum (preferably light);
  • 50 grams of highly carbonated water without minerals;
  • 2-4 leaves of mint or green basil (purple is not suitable for this purpose).

First you need to prepare the syrup from water and sugar by boiling the ingredients. Cool immediately and pour the syrup into tall cocktail glasses containing pre-cut strawberries and basil/mint leaves. Next, mix the liquid with the strawberries, which can be done with a wooden spatula or just a fork. At the same time, there is no need to crush the berries into puree - just let out the juice, which will add flavor to the drink.

Pour rum on top and sprinkle with crushed ice into small pieces. Top with sparkling water and place a straw for a cocktail. Mojito is ready!

Spinach and strawberry salad

What delicious things can you make if you are a follower of a raw food diet, and the holiday table requires something special? Even meat-eaters will enjoy the American green salad with red aromatic berries because of its piquancy and juiciness.

So, wash 100 grams of young spinach leaves, dry on a paper towel and tear into four parts, cut the strawberries into small pieces and mix with the spinach. Prepare the filling: 2 tbsp. l. light sesame seeds, 0.5 cups of sugar, one spoon of poppy seeds and a quarter of paprika, mix in a mortar, just do not pound into flour, but rather crush lightly. Add a quarter of wine vinegar, half a glass of high quality vegetable oil to the mixture and mix with a spoon.

Season the salad with the resulting sauce and serve immediately, stirring lightly with your hands, being careful not to overwhelm the ingredients. The salad looks light and airy, and tastes very unusual and attractive.

Confiture

Sometimes it happens that you don’t really want to eat jam that is already quite boring. What can you do with strawberries besides this? Jam and confiture! They also belong to sweet winter preparations, but they have a thicker, jelly-like structure and more meticulous preparation, which, by the way, is worth it. The confiture is very good with toasted bread and a freshly baked bun as a fragrant addition to your morning coffee.

To save sugar with maximum gelling effect, use pectin in powder form, which can be bought in pharmacies and specialty stores. One kilogram of strawberries requires an average of 5-7 grams of this substance. Add 0.5 kg of sugar to the prepared berries (they need to be washed, the stems removed and cut into small pieces) and left for half an hour to release the juice. During this time, you need to treat the jam jars (and lids) with steam.

Pectin must be thoroughly ground with 1-2 tablespoons of sugar and citric acid on the tip of a knife, added to the boiling strawberry mass and boiled for about four minutes, stirring vigorously with a spoon. Next, pour the finished confiture into jars and roll up the lids. The strawberry aroma and bright color will delight you more than once during the winter, when the jar of delicacy is opened for tea.

10 minutes to prepare

What can you quickly make from strawberries without spending hours in the kitchen? Knowing that most of the essential vitamins are stored in fresh berries, and strawberries generally do not like lengthy preparations, you can prepare the following simple but very appetizing delicacies:

1. Chocolate covered strawberries. Select large berries and, without tearing off the tail, dip half of them into pre-melted chocolate, cool in the refrigerator and use as a dessert for coffee, decoration for a cake or pastries. Kids love this simple but very healthy dessert made from fresh strawberries.

2. You can make something from a series of milkshakes with additives. For example: lightly beat 200 grams of creamy ice cream and one and a half glasses of milk with a blender until a foamy liquid mass forms, which is divided into three equal parts. Chop two bananas and mix with a blender with one part of liquid ice cream, and also beat one and a half cups of strawberries with the second part of the milk mixture. Carefully pour the banana component into a tall glass, then the milk component without additives and top it with strawberries, which can be done using a wide knife, pouring the cocktail along its blade. The child will be delighted with such a colorful delicacy, and the parent will be sure that the baby has received a good dose of healthy vitamins.

3. Strawberry souffle. Universal recipe! You can make it from fresh strawberries, or you can use other berries and fruits (raspberries, red currants, banana or orange). Ingredients:

  • 400 grams of cream;
  • 600 grams of strawberries;
  • 2 tbsp. l. instant gelatin;
  • 200 grams of sugar;
  • 100 grams of water.

Dissolve gelatin in cold water, let it swell and heat in a water bath until dissolved. Grind the strawberries in a blender. Whip the cream with sugar into a fluffy foam and mix with strawberry puree. While stirring, pour in the gelatin and beat with a blender for about 10-15 seconds. Place into bowls and cool.

Syrup to combat excess weight and swelling

Strawberries are famous for their diuretic effect, all nutritionists know this, so this syrup recipe will come in handy for all women who want to stimulate the functioning of their internal organs. In addition to this effect, the body will receive the lion's share of nutrients, vitamins and microelements contained in all components of this delicacy.

Cut 50 grams of fresh peeled ginger root into pieces and simmer in 200 grams of water for about 15 minutes, preferably over low heat and covered. Peel two lemon slices, cut from the middle of the fruit, mix with ginger, chopped strawberries (150 grams) and beat everything with a blender until smooth. Put it back on the fire, pour in another 150 grams of water and boil. Boil for about 10 minutes, cool and strain.

When taken orally, dilute this syrup with water in a ratio of 1:2 and drink one glass on an empty stomach in the morning. If the taste is too rich, you can add one teaspoon of honey per glass of liquid. The result will not be long in coming: within an hour, increased work of the kidneys and sweat glands will begin, the body will expel all “evil spirits” from itself.

Strawberry Madness: Yogurt Cake with Queen Berry

What kind of strawberry dessert can you make that will make everyone gasp? Of course, cake! And even more so, a jelly cake, which is the secret dream of all sweet tooths. This recipe is one of the simplest variations, and does not require baking or long preparation. Required ingredients and step by step steps:

  • Sort through 500 grams of fresh strawberries, select large berries, preferably the same size, leave whole, but remove the stems.
  • Dilute 30 grams of instant gelatin in 100 grams of water, and when it swells, heat it in a water bath.
  • Crush 500 grams of cookies such as “Yubileinoe”, “Tea”, “Toplenka” into crumbs, add one glass of fresh milk and mix. Enter 2 tbsp. l. cocoa powder, knead until smooth. Line the bottom of a springform cake pan with the resulting mixture. Tamp down well.
  • Pour one liter of strawberry yogurt purchased from a supermarket (it is better to choose one with a high percentage of fat content) into a bowl and add gelatin into it in a thin stream, stirring with a spoon. Pour the mixture onto the cookie layer.
  • While the yogurt layer has not hardened, place strawberries in it in a circle, with the pointed tip facing up. The berries should be almost completely covered in the yogurt, so you may need to press them in slightly. Place the cake pan in the refrigerator to harden.
  • Melt a bar of dark chocolate in a water bath, pour in 100 grams of cream and stir until smooth. Cool slightly and pour the prepared glaze over the top of the cake, from which the split rim has already been removed. Refrigerate again. Before serving, garnish with fresh strawberries or white chocolate shavings.

This cake is prepared very quickly, it is almost impossible to spoil it, so it is perfect for novice housewives who do not feel confident in working with baked goods. Its taste is amazing, richly aromatic, and the combination of strawberries and chocolate has long been recognized by confectioners as ideal. When cutting the cake, whole strawberries are revealed, which causes genuine delight in children.

Unusual preparations for the winter

Fresh berries are simply wonderful! But even on a chilly autumn or frosty winter evening, you also want to pamper yourself with the gifts of sunny summer. What can you make from strawberries for the winter? We offer several interesting recipes:

  1. Strawberry puree, pureed with sugar. Using a blender, puree two kilograms of berries with three kilograms of sugar, leave the mixture overnight in a cold place, and in the morning stir and place in plastic containers (you can use mayonnaise or ice cream buckets). Place in the freezer. In winter, such frozen puree is used to prepare most desserts that require the addition of strawberries, as it completely retains the taste, color and properties of fresh berries.
  2. and cherries: sterilize the bottles and put 1/2 of the berries in them (take equal parts, one kilogram of each). Pour boiling water to the top, cover and leave for 15-20 minutes. Then pour the water back into the pan, add granulated sugar at the rate of 500 grams for every 2 kg of berries and 2 liters of water, boil the compote for two to three minutes, pour it back into bottles and roll up. Be sure to turn it over to check the quality of the twist, leave it in this state for 10-12 hours, covering it with a blanket or a blanket folded several times.
  3. Strawberry chips. But this innovation will clearly interest those who do not know what tasty and unusual things can be made from strawberries for the winter. These chips are prepared simply: each berry needs to be cut lengthwise into four plates, placed on a drying tray (if not, use an oven tray) and dried in an electric dryer (or oven on minimum setting) or a dehydrator until they become crackers. Pour the cooled ones into glass jars or linen bags and store them like dried fruits, making sure that they remain out of damp places. In winter, you can add it to compotes, tea, or filling for a pie or cupcake. By the way, the taste of the tea is amazing: no jam can give you such a rich summer aroma.
  4. Dried strawberries. Of course, you will have to tinker with this product, but the result will more than meet all your expectations. So, cover 2 kg of strawberries with 800 grams of sugar and, shaking, mix so as not to damage the berries (selected, beautiful and even). Leave for a day in a cool place. Next, drain the juice that has formed (it can be used to make fruit juice or rolled up for the winter), and boil the remaining berries for no more than 10 minutes in syrup prepared in advance (350 grams of water and sugar each). It is important that the heat is minimal, otherwise the berry will change color. Then put the strawberries in a colander so that the syrup drains completely (we also roll it up), and then we dry the berries in the dryer for about two hours, not just at once, but in two or three stages. This delicious dessert will serve as an unusual decoration for cakes, pastries, or simply be eaten like candy.
