Recently I was asked here in the magazine - is it possible to bake pies with custard? Instead of baking it in the oven for a long time, maybe just cook the cream in advance? I remember I answered that this is not very common, that they usually bake for a long time and do not cook the cream in advance.
And, in general, she was wrong. Because I soon remembered one of my favorite desserts - baskets with custard, Portuguese paste de belem. In this recipe, a sweet, thick custard is baked onto unsweetened (puff pastry) dough. Delicious! They are also in my first book.
However, baking regular custard is really not very correct, in my opinion. To make the pie tasty, it would be good to use cream instead of milk, and also make the cream sweeter and thicker than usual. But what you can neglect is the yolks; it’s easier and faster to cook cream for the pie from whole eggs. However, we must take into account that some people do not like the egg-omelet taste of such a cream. Well, here you need to do the same as with creme brulee - just be patient. Let the cake sit at least overnight and you won’t notice any eggy taste. And of course, don’t forget about vanilla (vanilla sugar), this is the case when it is simply necessary.

200g flour
50g sugar
1 egg
100g butter
a pinch of salt
1-2 tbsp. lemon juice

Cream:
3 eggs
130g vanilla flavored sugar
or 120g sugar and 1 packet of vanilla sugar
or 130g sugar and 1 tbsp. vanilla essence
or 130g sugar and 1 vanilla pod

500g cream 10-20%
75g flour

oven 180-200C

First prepare the chopped sweet dough. Place flour, cold diced butter, salt, sugar in a food processor and chop into fine crumbs. You can grind the mixture with your hands and cool. Add juice, egg and knead the dough.

Roll it out on a floured surface. Place in the pan, letting the edges hang out from the pan, and run a rolling pin over the top to cut off any excess dough. Prick the dough with a fork.

Place baking paper on the dough and add a load - balls or rice or beans. Bake at 180C for 15 minutes.

While baking, prepare the cream. To do this, mix the eggs with sugar (without beating).

Then add flour into a smooth mass. Add vanilla or vanilla sugar.

Bring the cream to a boil and pour into the egg mixture, stirring well. If the bowl is small, you can pour out not all the cream, but half.

Pour the egg-cream mixture back into the saucepan. Stirring vigorously, cook until thickened. You can cook over medium heat, stirring with a whisk, then the cream will be ready very quickly.

Remove the baked base and remove the weight and paper. Spread the cream onto the tartine and return it to the oven. You will need a temperature of 200C and 20-25 minutes. When the cream rises evenly and browns, the pie is ready.

Take it out; the cream will settle as it cools. Cool completely and let stand.

1. Combine room temperature kefir with eggs, vegetable oil and a pinch of salt. Mix well to obtain a homogeneous liquid mass. Please note that all products must be at the same room temperature. Because soda only reacts with warm foods.


2. Pour flour mixed with soda into the liquid mass. It is advisable to sift it through a fine sieve to enrich it with oxygen. This will make the pies softer and more tender. Also add sugar to the dough. Although it is not particularly important in the recipe, because... The sweetness of the buns comes from the custard.


3. Knead the elastic dough so that it does not stick to your hands and the walls of the dish.


4. Form the dough into round buns measuring 4-5 cm in diameter. Roll out each ball with a rolling pin into a thin round layer.


5. Place custard on each piece of dough. You can make the custard yourself or use ready-made briquettes on which the manufacturing technology is written. If you make it yourself, you can find a detailed recipe on the website. Or use the following proportion. For 1 liter of milk, take 4 tbsp. flour, 4 eggs and 200 g sugar. Beat flour, eggs and sugar into an airy foam and pour into warm milk. Place the mixture on the fire and heat with regular stirring until the first bubbles appear. Then remove the cream and put 50 g of butter in it.


6. Lift the edges of the dough, covering the cream and seal tightly in the middle.


7. Do a similar procedure with all the cream and dough. Place all the molded pies on a baking sheet.


8. If desired, brush them with egg or milk and sprinkle with sesame seeds. Place the baking sheet in a preheated oven at 180 degrees for 25-30 minutes. Serve these quiches for breakfast with a cup of hot, strong coffee. Warm baking, sticky sweet filling inside... - a luxurious treat and a great start to the day.

  7. I cover the cream with a cake from another part of the batch, glue the edges of the pie and make a couple of holes on the surface with a fork.
  8. I bake for 30 minutes at 200 gr. I take it out of the oven, let it cool and cover it with sugar. powder.

Egyptian Lenten Pie with Lemon Custard
